"NSKnives" is operated by Niels Stevens, a 21-year-old man from Buinen, Netherlands. About 7 years ago, he started making knives. At a young age, he knew this was his calling. Over the years, he made different types of knives, but eventually specialised in making high-quality chef's knives. This decision was mainly driven by his desire for a high-quality chef's knife for personal use, which has now evolved into what he does today. In addition, he is currently expanding his range with different knife lines for all kinds of purposes.
My first knife
His first knife, manufactured in 2016, began life as a slab of 304L stainless steel. At the time, he was fascinated by survival knives, but his parents never let him have one (which is understandable). Nevertheless, he wanted one and, resourceful as he was, he tried to make one himself. Although this knife is not very hard, barely has a cutting edge and has handles made of random pieces of wood, it has eternal value for him.
2022 Western Gyuto
One of his more recent knives is the 2022 Western Gyuto. This knife marked an important milestone for him, being one of the first knives of his to be approved by the chef of a professional kitchen. The knife is made of 80CRV2, a high-quality carbon steel ideal for a blackened blade and a stabilised wooden handle. The knife has an elegant shape and cuts through everything effortlessly.
